Serving recommendation:  Ready to eat. Slice thinly and drizzle with a good stream of extra virgin olive oil.  Can also be eaten alone or with roasted almonds.  Great as a snack or appetizer        

 

Tuna mojama, also know as "jamon of the sea" is a 2000 year old recipe that dates back to Roman and Phoenician times.  Today, muxama (Portuguese) is still made in much the same way, with salt and dried tuna loin.  Tuna mojama is very popular in Spanish cuisine (especially in Southern Spain, in the Andalusian region) and Southern Portugal.
